CUT Bar @ Marina Bay Sands

Once upon a yonks, I checked out CUT Bar for drinks.  I love CUT, even before stepping foot on the restaurant. They have a steady regular clientele who patronize them up to three times weekly and I reckon that it is definitely worth looking forward to someday! Until then, let me make do with the bar and bar food.

Help! Save the Bees ($26)
Ketel One Citron, Thyme and Lavender Honey, Limoncello, Lemon Bitters

Fruity and zesty, this is so easy to love and bequest "favourite cocktail" on. Demure like a fruit punch, a secretive dragon in the hiding.

Just because of that one unforgettable cocktail, a return was most definitely on the cards..and I did.

onion rings

RC Onion Rings ($18)

Judging from the portions, this is an entire onion sliced and deepfried. Presented like a tower of thin onion rings, we kept our fingers constantly greased with the picking of rings from the tower. The thin batter was incredibly addictive. Never quite had onion rings this way before and I’m glad to say, I’m totally on the band wagon for this with fries and onion rings. The aioli dip for this was amazing too – wishing for seconds the whole night long! The kitchen is adamant on ever using truffle so no truffle fries…so perhaps, fries next time?

xiang li

Xiang Li "Fragrant Pear" ($26)
Absolut Pear Vodka, Canton Ginger, Lemon grass, Pear Puree

Possibly the sweetest cocktail they have on the menu and I made a beeline for it. Delicious much, the pear puree made this a natural lover amongst most ladies. Yes, this is also a favourite.

Show Me Love ($26)
Belvedere Vodka, Saint Germain, Lychee Juice, Lime

CUT Bar’s answer to lychee martini with this cloudy cocktail. The lemon rind made it fragrant and gave the added zesty touch.

Whiskey lover loved it. Not as smokey as the next that he'd relish.

I love counter bar seats – interaction with bartenders are always insightful. The companion wanted whiskey with a smokey aftertaste, he gleefully presented his nearly complete collection of various degrees of smokeyness.

GL Laphrig 10 Years ($24)

Almost rancid for a non-whiskey fan. I guess its the whole full bodied smokeyness that unveils a pandora's box of flavours that went into distilling this.

"Adios Nonino" ($26)
Maker's Mark, Amaretto, Aperol, Burnt Orange Peel

He also took the liberty to let us try a single portion of another bestseller with burnt orange. Whiskey lover I am not but they blended it in so seamlessly with the other mixes – sold!

Thoughtful service - water kept warm and refilled.

I love how their cocktail menu covers all grounds – vodka, sochu, whiskey and gin. 38 on the menu, 4 down and 34 to go. Unlikely some of the other drinks that I’ve had elsewhere which whack you hard with the first sip, I love how CUT Bar drinks are seemingly gentle but stings like a bee at the very end. Potency has been warn but I’m so loving CUT all the way!
